Zoup! Eatery Goes Wild With NEW Alligator Gumbo This Fall

Zoup! Eatery, the leading fast-casual concept known for its “Good, Really Good” soups and broth, will usher in soup season this fall with an exciting menu addition, Alligator Gumbo. Inspired by the flavors of Creole cuisine, the new soup will be available for a limited time at all Zoup! Eatery locations beginning Oct. 18.

A wild new soup

Alligator Gumbo begins with the holy trinity of onions, bell peppers, and celery, with the addition of roux, farm-raised alligator from Louisiana, crawfish, andouille sausage, our proprietary seafood broth, and a special blend of spices and rice. Customers on the hunt for the new gumbo can find it at Zoup! Eatery’s across the country in addition to Ontario, Canada. The new gumbo is available through December 31 or while supplies last.

The culinary team at Zoup! have a passion for creating recipes with big, bold flavors and have previously introduced customers to unique game proteins such as its Rattlesnake Rabbit Stew. Zoup! founder Eric Ersher challenged them once again and Alligator Gumbo delivered. While it may be a unique food option to some, alligator meat is consumed in many parts of the world. It’s not uncommon to hear of alligator meat being eaten in Australia, Thailand, Philippines, or South Africa, likewise to the southern region of the U.S.!

“In creating Alligator Gumbo, we set out to take our guests on a culinary journey to the Louisiana bayou with authentic flavors that include farm-raised alligator, a lean and healthy protein choice,” said Jessica Wainwright, Zoup!’s Director of Culinary Innovation. “One of the great things about food is the way it brings people together through shared experiences as well as conversations about different cuisines and cultures, which is ultimately what we hope to deliver to our guests.”

In addition to the new Gumbo, returning customer favorites this fall season are Pumpkin Pie Bisque, Wicked Maple Harvest and Ginger Butternut Squash.
